I play by their rules but I'm often tempted not to. They just started requiring everyone to add a privacy policy on their sites.

Well when someone pay me to optimize his site i play by the rules 100%! I dont wanna take the risk of baning or something.
But to be honest i have been played under black hat for domains i dont really care just to expertise a bit ^_^

There is such a lot of black hat at the moment and it is tempting to join in. results are said to be excellent

However, this for me is a business and the risk of losing that business if caught doing black hat is too high

I know what you mean, I too am tired of working so hard to SEO within Google's increasingly fascist and arbitrary rules. It really isn't fun at all.
